Chicken Curry Salad with Couscous

Serves 4

1 lb. Cooked Chicken, chopped
1/3 cup raisins
1/3 cup almonds, chopped
1/3 cup celery, chopped
2 T. curry powder
1/4 cup light mayonnaise
salt & pepper
2 cups cooked couscous
Parsley & goat cheese to use as toppings (optional)


Directions:
Combine all ingredients and the serve on lettuce, bread, or a wrap.
